Our Easter Donut Brunch



Happy spring!!! Who doesn't love donuts? If you don't then you're a pretty rare phenomena... :)
But needless to say, most of us can't eat donuts as often as we wish we could, or we'll pay for it with our wallets AND waistlines. Spiking our blood sugar by eating too much sugar or just carbohydrates in one sitting will lead to the release of insulin, which stores that sugar as fat... bad, bad cycle here. Such a shame that donuts have to be part of it.
But wait, these donuts AREN'T! Yep. You read that right. These donuts are lowcarb, sugarfree (unless you put sprinkles on a few of them for your child like I did, but I consider that an allowable treat) and full of healthy fiber and even protein, and therefore, waistline friendly. :)
Now, sometimes we do just eat regular donuts, but we wanted to eat these guilt-free, and we paired them with fried ham, scrambled eggs, and lowcarb good-fat-rich bulletproof style lattes. Mmmm. All of that would not have been a good combination with too much sugar either.
Anyway, enough of that.
Here's some pictures from our brunch (sans eggs & ham, we ate that too quickly haha) and how you can make your OWN donuts. For those following the "Trim Healthy Mama" eating plan, these would be an "S". Note: I've linked some of the specialty grocery items I've used with my Amazon affiliate links for your convenience, but there are several other options. I also linked the Trim Healthy Mama store, and good ol' Walmart. ;)

INGREDIENTS
Oven preheated to 350° and a greased donut pan, or electric donut maker warmed and greased per instructions

1 C. lowcarb baking blend (you can buy this one that I use on Amazon or directly from the Trim Healthy Mama website, which is currently having a sale but of course you have to pay shipping, so unless you buy quite a few items from their store you're not going to save very much vs Amazon...)
1 tsp. baking powder
Pinch of salt (about 1/8 tsp.)
1/3 C. sugarfree sweetener (PyureTruvia, or Trim Healthy Mama's Super Sweet Blend)
3 eggs
1/3 C. cream + 1 tsp. vinegar, or 1/3 C. sour cream
2 tsp. vanilla
1/4 C. almond milk (make sure its unsweetened- can sub unsweetened cashew milk or water)
1/4 C. butter, melted
DIRECTIONS
Combine dry ingredients, set aside.
Blend wet ingredients, then add dry ingredients and stir til combined. Pour into molds. In oven, bake for 17 to 20 minutes. For electric donut maker, follow cooking instructions.
Brush with melted butter and roll in cinnamon & sweetener mixture (I used granular erythritol for that part), or powdered sweetener (I like this one), or dip in a chocolate ganache... the options are kinda endless.
In this particular case, I wanted to fry them in our electric fryer (in peanut oil, which I don't cook with all the time, but we enjoy fried treats with) so I added a little more baking blend and sweetener, and it may seem strange, but about a handful of finely shredded mozzarella cheese. It worked nicely to be able to roll the dough and cut out donuts.
To make a chocolate ganache, I slowly melt some unsweetened chocolate baking bar on the stove and add a little refined coconut oil (so there's no coconut flavor), a little more unsweetened cocoa powder, and some powdered erythritol to taste. I remove from heat to let it cool a little while stirring, then add some heavy cream a little at a time and it immediately begins to thicken up nicely. No I don't have a recipe for that, I almost always cook to taste anyway.
For toasted coconut variety, I added a pinch or two of nutmeg to the batter, and browned some unsweetened coconut flakes in butter on the stove, then sweetened them to taste.
